The Chef & His Cuisine

Chef Emmanuel de Menthon offers an inventive and sensitive cuisine that beautifully highlights the flavors of Provence.

Each day, he selects his ingredients at the Velleron farmers’ market, following the rhythm of the seasons and daily arrivals, working with local producers he knows and deeply respects.
Back in the kitchen, he creates a surprise menu inspired by the freshness of the produce, the inspiration of the moment, and his desire to craft a unique experience for his guests.

His cuisine is both refined and approachable, indulgent without being heavy, always evolving, with a strong emphasis on vegetables, fresh herbs, and unexpected flavor combinations.

Signature Dishes

Although the menu evolves daily, a few emblematic dishes offer a glimpse into the chef’s culinary universe:

Heirloom tomato and red fruit variations

The “Provençal Maki” — a delicate omelette with black tapenade, rolled and filled with crisp raw vegetables and fresh herbs

Hake loin with fennel and citrus

Slow-roasted lamb shoulder infused with rosemary

Gratin dauphinois with black tapenade

These dishes are reinterpreted throughout the seasons, inspired by the chef’s creativity and the finest market produce.

A starter celebrating the flavors of Provence

Main course of your choice: fish, meat, or vegetarian, served with a selection of seasonal vegetables

Dessert featuring locally grown seasonal fruits

Menu €60 per person (excluding drinks)

An optional seasonal cheese course is available — please mention this when booking.

The menu is entirely designed around the guests present.
When making your reservation, we kindly ask you to inform us of your preferences, allergies, or dietary restrictions, so we can create a menu tailored to each guest while maintaining harmony at the table.

Reservations are required at least 24 hours in advance.
We cook primarily for our in-house guests; external guests may book subject to availability and upon request.

We invite you to enjoy aperitifs in a different way — **at the chef’s table, in the kitchen.**
From 7:00 pm, share your chosen drinks alongside the chef, watch the evening’s menu being prepared, discuss ingredients, ideas, and culinary secrets, and discover the behind-the-scenes of the chef’s creative process.

Depending on the season, the chef may also take you to the garden to pick fresh herbs that will elevate the dinner.

A privileged, convivial, and gourmet experience.

The class begins with a visit to the market alongside the chef, discovering seasonal produce and selecting the day’s ingredients together.
Back at the Bastide, you cook alongside the chef, exchange ideas about techniques, flavor pairings, and culinary inspirations, before enjoying the dishes you prepared together, accompanied by a glass of wine.

An authentic experience for 2 to 8 participants; additional guests may join for the tasting only.
